I accidentally came up with this three ingredient tomato recipe when  I was snowed in on a Monday!

I didn’t get the chance to stop at the grocery store before the show hit, so there were no veggies in the house – that’s a rarity in my kitchen! Stereotypical, I know… #dietitianproblems.

Veggies are FUNDAMENTAL to any lifestyle.  Whether you’ve got a medical condition or not!  As you may have figured out, I’ll do whatever I can to make sure veggies are a part of my day because they really do make that much of a difference in energy and quality of life!  (We talk allll about this in-depth in Module 1 of the Kitchen Alchemy nutrition fundamentals course…)

It was time to get creative.

Side note – since I had a hankering for grilled cheese, I figured tomato soup would be the perfect complement for grilled cheese on a snowy afternoon.  Fun fact:  did you know that ½ cup of tomato sauce or 1 cup of tomato soup each count as a full serving of veggies?! Don’t mind if I do…

Here’s how I improvised and created a three ingredient tomato soup:

1.  Tomato sauce

  • There was no tomato soup on-hand, but as I rummaged through the cabinets, I came across a few jars of Rao’s brand tomato sauce.  (You can use whatever kind of sauce you like/have.  I prefer Rao’s because the taste is unbeatable… aside from my Mom’s sauce, of course!) 🙂
  • Contraindication:  You may want to avoid tomato sauce if you’re struggling with heartburn or ulcers of any kind.

2.  Bone broth

  • You can actually use ANY kind of broth, but bone broth is my personal “broth of choice” because it goes such a long way to help support a healthy gut.  I had the homemade stuff on-hand, but you can also find this in stores.

Vegetarian/plant-based alternative to bone broth: 

  • Swap the bone broth for vegetable broth.

3.  Just a little bit of butter!

  • This part is totally optional, but recommended if you’d like to elevate the experience of a creamy tomato soup!  I add just a tablespoon (or less). 

Culinary alternatives to butter:  

  • You can also use ghee (lactose-free, casein-free “clarified butter”) or a splash of cream/half & half/milk depending on your health goals and what you have on hand!

Dairy-free/plant-based alternative to butter:

  • For a vegan and creamy tomato soup, swap butter for a plant-based margarine that doesn’t have any “partially hydrogenated oils”. 

As you can see there are infinite ways to create a delicious and semi-homemade 3-ingredient tomato soup based on what you like and what you have at home.  The sky’s the limit!

Semi Homemade Three Ingredient Tomato Soup

There's nothing better than a bowl of creamy tomato soup to have on a chilly day, maybe even on the side with a grilled cheese! This recipe is only 3 ingredients and totally customizable based on your personal preferences/needs.
Prep Time 10 mins
Cook Time 5 mins
Total Time 15 mins
Servings 8 cups

Equipment

  • Measuring cups
  • Blender or Vitamix
  • Soup ladle
  • Large stove pot
  • Sieve (optional but recommended)
  • Storage containers

Ingredients
  

  • 6 cups broth of choice (I use bone broth!)
  • 2 cups all-natural tomato sauce of choice (I use Rao's brand)
  • 2 tablespoons butter (Can swap for ghee, vegan butter, or a splash of milk/cream)

Instructions
 

  • Combine all ingredients in a large stove pot.
  • Cook over medium heat until butter is melted and soup is warm, but not too hot. Stir well.
  • Transfer small batches at a time into an immersion blender, and puree.
  • If needed: strain soup before transferring to a bowl. I had to do this because my tomato sauce had artichokes in it, and I found some unwanted string-like pieces of artichoke in our soup!
  • Heat up and enjoy, and transfer the rest into storage containers.

Notes

You can enjoy this soup on its own or, speaking from personal experience, it goes fabulously on the side with a grilled cheese! 
Keep refrigerated and enjoy this three-ingredient tomato soup within ~5-6 days after making it.
